I love this. I am not a vegan but often cook for some who is. I would recommend this to anyone who wants to cook authentic Mexican food. The instructions are clear, and it covers everything I was looking for and more. For the record, I am an experienced cook, and I have cooked a lot of Southwestern style food, and am now excited to redirect myself to more authentic Mexican fare.
The recipes I tried are delicious. My favorite thus far is the Oaxacan Black Beans, which are slow cooked for 8-10 hours in a 275 degree oven. I used a Dutch oven casserole instead of a cazuela, doubled the recipe and cooked them for eight hours. The recipe turned out as advertised, with beans that were dense and redolent with flavor. I did have to add extra water and found that the cooking was complete in the minimum amount of time. This was a really healthy recipe as it used no added oil. Since I reduced the salt I added some lemon to perk things up a bit.The beans are delicious on tacos (I topped those with his Salsa Verde), on sandwiches with chopped onion and salsa, with rice or with other grains. I also made the Basic Guajillo Chile Sauce and used it to flavor polenta, and that worked very well too. I liked the recipes I tried well enough to say that I will do others.This book offers a truly extensive look at Mexican regional cooking and goes far beyond what are usually considered the classic recipes. It includes chapters on "Gear, Ingredients and Techniques, "Corn, Beans, Rice and Chiles", "Salsas and More", "Street Food", "Tacos", "Tortas and other Sandwiches,", "Enchiladas," "Tamales," "Salads," "Soups," ""Main Dishes," "Grilled Fare," "Small Bites and Snacks," "Breads," "Drinks," "Sweets," and "Resources." This is an extensive exploration into finding and using alternative ingredients for foods like chorizo, quezo fresco, meatballs and grilled meats. My only objection to the book is that he did not put a lot of effort into developing recipes that use significantly less amounts of oil than traditional Mexican cooking does. But I know how to do that and other enterprising cooks will, I am sure, follow along in his footsteps and do that job for everyone.
....for REAL Mexican cooking. Even if you're not vegan, these recipes are inspiring and seem really authentic. I got it because I've mostly cut out meat and cheese from my diet, and with these recipes, nothing feels lacking.
After reading the reviews the book suffers from pedestrian home cooks, who fail to recognize the need for a very authentic cookbook with authentic ingredients and actual techniques, not a watered down version of Mexican cooking.As a person who owns over 20 Mexican/South American based cookbooks, none of the ingredients were really out there or even difficult to get a hold of. I have grown my own epazote and have even found epazote in the Wild in rural Pennsylvania. I really appreciate the author for the dedication of an authentic Vegan Mexican cookbook.
I was cooking quite a bit of Mexican food before I went vegan, this book has plenty of good subs and recipes.
I got this for my vegan roommate. I cook primarily Mexican food (because why ever cook or eat anything else?!), and she gets super jealous because it's amazing and she can't eat any of it. If you know anything about authentic Mexican food, you know that even most of the technically vegetarian products, like rice and beans, are cooked in lard; sad story for non-meat eaters. This book really surprised me! It has so many awesome recipes with super authentic ingredients, like ones you would have to HOPE to find in a carniceria if you don't live on the border. I haven't tried any of them yet, but I'm looking forward to it!
Really love this cookbook. Ready to try a few of the recipes in it experience tells me from having a lot of cookbooks and being a cook, that the recipes here seem to have what it takes for delicious meals! Will let you know when we get a few of the dishes from imagination to table. LOL
Bought this for my mom and she LOVES the recipes! She's made several and is having a blast.
